Green Eggs Café

This eco-conscious focused café tantalizes its customers with dishes such as the Red Velvet Pancakes layered with strawberry mascarpone and topped with fresh strawberries, pure maple syrup and chantilly cream. Other featured brunch items on the menu include, Peanut Butter Crunchy French Toast with blackberry coulis, quinoa porridge, agave nectar, cinnamon, cardamom, golden raisins, and cream, topped with fresh berries and fresh berry compote.  Staying true to it’s mission statement, its menu features local and sustainable ingredients:

“We participate in buying fresh products locally which supports merchants in the area and in turn, so do you. Our herbs and spices are grown in house on the rooftop garden.  At Green Eggs we recycle all paper products, aluminum, glass and plastics. All food and organic waste is composted and also not put to waste. We prohibit the use of all Styrofoam products and plastic bottled beverages. All take-out containers are biodegradable and are made from corn, plant materials, and sugar (which looks like plastic- but we assure you is not).  By dining at this establishment you are contributing to a minimal waste environment.”

The slogan at Supper is “Seasonal American Cooking, Featuring the Freshest Local Ingredients,” and they take their claim very seriously.  Forming an exclusive partnership with nearby organic farm, Blue Elephant, chef-owner Mitch Prensky visits the farm five days a week to hand pick ingredients that end up on your plate later that day. The “Supper Benny” features poached eggs on grits cakes with country ham, sautéed greens and mustard hollandaise, and for those with a sweet tooth there’s always the “Shoo Fly Pie French Toast” served with molasses custard, apple butter, streusel crumbs and apple snitz.  (Note: The seasonal nature of the menu, may cause the available dishes to change with availability of ingredients.)
