Basil Pesto with Cashew Recipe: Serves 4
Ingredients:
2 cups of organic basil
1 cup of organic cashews
1/4-1/2 cup of organic extra virgin olive oil
Salt to taste (approximately a teaspoon)
Directions
Blend basil, cashews and salt until all ingredients are combined. Add olive through top funnel of food processor as you puree all ingredients into a smooth paste. Toss with hot whole wheat pasta or mix with quinoa.
