This delicious vegan recipe was adapted from Food.com
Dry ingredients
1 1/4 cups whole wheat flour
3 tbls brown sugar
1/4 teaspoon salt
1 1/2 tsps baking powder
1/4 tsp nutmeg
1 tsp cinnamon
Wet ingredients
3/4 cup milk (soy, almond or flax)
2 tbls coconut oil
1 tsp vanilla extract
1/4 cup applesauce
1 cup of chopped apple, peeled and cut into 1 cm cubes
Directions:
1. Preheat oven to 400°F; grease muffin tins.
2. Mix dry ingredients in a large bowl.
3. Mix wet ingredients in a separate vessel.
4. Add wet to dry and mix well. Batter will be lumpy.
5. Mix in chopped apple.
6. Pour into muffin tins and bake at 400°F for 20 minutes.
7. Drizzle maple syrup over muffins when fully baked and hot for desired sweetness
